Chickpea, cauliflower and spinach curry from Vegetarian Times. Makes a wok-full of food. It was very good, but it could use a little heat. Casey doesn't go for that so I didn't add any. Despite what the recipe said, I used low-fat coconut milk and it was still delicious. I will tell you this: if you decide to make this dish have all of your prep work done ahead of time! Once you get going the tempo is stir-fry fast, and you have to be ready for it! Six points a serving, too. Serve with warm pita.
Also, how cute is the owl spoon rest my lil' sister bought me when she was in Maine? Sad note, my IKEA wok has about had it.
